Recipe: No-Bake Energy Bites & Blueberry Smoothie


No Bake Energy Bites

Ingredients

• 2/3 C. Creamy Peanut Butter

• 2 Tbl. Honey

• 1/2 C. Old Fashioned Oats

• ¼ C. Finely Chopped Walnuts

• ¼ C. Ground Flax Seed

• ¼ Tea. Cinnamon

• 3 Tbl. Mini Chocolate Chips


Instructions

One. Melt the peanut butter and honey until completely melted and combined, stirring often.

Two. In a separate bowl, combine the oats, walnuts and ground flax seed. Add in the cinnamon and mix well.

Three. Pour the peanut butter and honey mix over the dry ingredients. Mix together until all the ingredients are combined. Fold in the mini chocolate chips. The chocolate chips may melt from the heat of the peanut butter and honey mix.

Four. Cover and chill for at least 30 minutes in the refrigerator.

Once it is chilled, roll into one inch balls (best to use a cookie scoop that measures one tablespoon).

Five. If desired, press a few mini chocolate chips to the balls or roll them in mini chocolate chips.

Store in refrigerator, covered, for up to a week.

 

Yummy Blueberry Smoothie

This delicious smoothie is made up of only three simple ingredients. Perfect as a light breakfast or a healthy afternoon snack.

Prep Time 10 minutes

Total Time 10 minutes

Makes about 3 cups


Ingredients

• 1 1/2 C. Water

• 2 C. Frozen Blueberries

• 1 Lemon

• 1 Tbl. Ground Flax Seed (Optional)


Instructions

One. Pour the water into your blender.

Two. Add in the frozen blueberries and flax seed.

Three. Squeeze the juice of the lemon into your blender.

Four. Blend until smooth and serve.

Keep any extra smoothie in the refrigerator for up to 2 days.
